Useful first checks. If the display is blank rather than wrong, the probe is not your problem — check the controller and its supply.
What this part is
A sensor made of two dissimilar metals joined at the tip, generating a small voltage proportional to temperature. Type K is the usual choice for bakery ovens.
How it fails
Thermocouples drift before they fail outright, so the oven bakes a little wrong for weeks before anyone calls. Then the junction opens and the controller reads full scale or an error. Grease ingress into the lead and repeated flexing at the gland are the usual causes.
What decides whether a replacement fits
These are category-level selection factors, not specifications for a specific product. Confirm each value from the machine and the physical part.

The mistake people actually make. Measuring probe and lead together as one length, then finding the stem sits too deep or the cable will not reach.
